Simple yet delightful, sweet potato sausage kale hash recipe. This easy to make sheet pan meal is healthy yet a delicious, satisfying meal. Sweet Potato Sausage Kale Hash

Preheat oven to 400. Place parchment paper on a baking sheet.

Peel and dice the sweet potatoes. Place in a mixing bowl and drizzle olive oil over the potatoes, mix well.

Sprinkle garlic powder, salt (I used ½ tsp but salt according to taste), black pepper (I used ¼ tsp), paprika and rosemary over the potatoes Stir well. Pour onto the baking sheet. Place in oven for 15 minutes.

Place the chopped kale in the mixing bowl and drizzle a little olive oil, about ½-1 tbsp, a little salt and pepper. Stir.

Add the sausage and kale to the potatoes. Cook for another 7 minutes.

Remove from oven and add the eggs. Make 4 spaces in the potato mixture by using a spatula. Crack an egg in each spot. Sprinkle a little salt/pepper over each egg. Place back in the oven for 6-9 minutes, or according to how you like your eggs cooked.

Remove from oven and let cool 1-2 minutes.
