At my house, we have a weekly tradition of either cooking Mexican food or getting carryout from a local Mexican restaurant. My family LOVES Mexican food! One night, specifically “Taco Tuesday”, we stayed in and cooked ourselves. Rather than fajitas or traditional beef tacos, I decided to try shrimp tacos. As I was prepping the food and making margaritas, I had a thought… I wondered how the shrimp would taste cooked in a margarita (without sugar) and with some heat added? After all, what’s Mexican food without a good margarita?! So I created this Spicy Tequila Lime Shrimp Taco recipe, and it turned out simply delicioso! Spicy with subtle hints of tequila and lime along with a cooling avocado cilantro cream sauce to top… so GOOD! Enjoy and as always, let me know how this recipe turns out.

Instructions

  1. Start with making the sauce. In a food processor or with a hand mixer, mix the avocado, sour cream, oil, garlic powder, salt, and cilantro. Cream until blended and creamy. Set aside.
  2. Heat 1 tbsp of Olive Oil in a medium sized skillet on medium high heat.
  3. Mix the shrimp (if frozen defrost beforehand) with 1 tbsp olive oil and ¼ tsp garlic powder. Toss the shrimp in the skillet and cook on each side for 4-5 minutes.
  4. Add the ½ tsp garlic powder, salt, cayenne pepper, and smoked paprika to the shrimp. Stir.
  5. Add the tequila and lime juice. Stir. Cook for 2-3 minutes.
  6. Reduce to low heat and let simmer for 2-4 minutes.
  7. Prepare your tacos. Take a tortilla, add shrimp (roughly 6-7 per taco), top with avocado, lettuce, and drizzle with sauce.
  8. Serve with a lime wedge and squeeze on top if preferred. Simply Enjoy!
