Preheat oven to 400.

Take the puff pastry sheet, lightly roll out. Cut the puff pastry sheet into 10 even sized squares. Place parchment paper on top of a large baking sheet. Lay the puff pastry squares on top of the parchment paper.

Lightly cut a thin border on each puff pastry square, making a window. Roughly 2 cm from the edge. Do not fully cut the pastry, you want to make an impression with the knife. Using a fork, poke holes in the middle, avoid the edges.

Whisk the egg in a small bowl. Using a basting brush, lightly brush the puff pastries squares with egg wash. Lightly sprinkle sugar around the edge of each square. Place in the oven for 15 minutes.

Remove from oven and let cool 2-3 minutes. Next take a microwaveable safe bowl, mix the chocolate chips, cream, and espresso powder. Microwave for 20 seconds at a time, stir until creamy smooth. Let cool for 1 minute

Once the puff pastries have cooled a little, press down the center of the square but careful not to press down the sides. Spread the cooled chocolate ganache in the center of each square and to the edges. Let cool for 15-20 minutes. Top with sprinkles or flaky sea salt. If the chocolate has not set, place in the refrigerator until firm.
