Delicious Vanilla Bean Cut Out Sugar Cookies with a Vanilla Bean Icing. These cookies are not only super delicious, but they are also soft, and very easy to make. Perfect to make/decorate for any kind of holiday! I have made these now a few times for different holidays, but the Easter cookie decorations turned out to be my favorite.

My daughter was my assistant chef with this recipe. She had so much fun and could not stop stealing little bites here and there. Not only did she have fun baking up this recipe with me, but she also loved giving these sweet treats to family members even more. Vanilla Bean Icing

Instructions

  1. Whisk together the flour, vanilla bean, and baking soda. Set aside.
  2. Using your stand mixer (paddle attachment) or hand mixer, mix the softened butter, sugar, and brown sugar for about 30-60 seconds. Add the egg and vanilla extract. Mix until smooth, about 1 minute.
  3. Add the flour mixture and mix until combined.
  4. Place the dough on parchment paper and place another piece of parchment paper on top. Roll out the dough to about ¼ in thickness. Slide the dough (still on the paper) onto a large baking sheet. Place in the refrigerator for 30 minutes minimum.
  5. Once the cookies have chilled, pre-heat oven to 350. Use whatever cookie cutters you prefer to cut out shapes. Place the cutout sugar cookies on parchment paper on a large baking sheet. For smaller cookies bake 7-9 minutes/larger cookies bake 9-12 minutes.
  6. Remove from oven and let them cool before decorating.
  7. While the cookies are cooling, prepare the icing. Whisk together the butter, shortening, and vanilla extract. Add the powdered sugar and vanilla bean. Start with 2 tbsp of milk, whisk. Slowly add the rest of the milk, 1 tbsp at a time until the icing is thick yet smooth. (Takes a couple of minutes of whisking to get smooth.)
  8. Add food coloring to icing if desired and decorate the cookies to your preference. Enjoy!
