Who loves smores? Who loves a good chocolate chip cookie? Well, I decided to combine both and make smores stuffed inside a large chocolate chip cookie. Best of both worlds! This large chocolate chip cookie is stuffed with little smores. Gooey in the middle from the smores, with lots of chocolate from the cookie and smores. This sure is a sweet and indulgent treat! Instructions

  1. Mix together the flour, salt (optional), and baking soda. Set aside.
  2. Using a stand mixer (paddle attachment) or hand mixer, whisk together the brown sugar, sugar, and butter until creamy. Add vanilla and eggs. Whisk for 1 minute. Add flour mixture. Mix until combined. Stir in chocolate chips.
  3. Once your dough has formed. Foil the top of the bowl of dough and place in the freezer for 20-30 minutes.
  4. While the dough is setting, assemble your smores. Break the sleeves of graham crackers into 8th’s. Cut the marshmallows into halves and break up the Hershey bars. Take a small graham cracker square, top with the halved marshmallow and a chocolate square, then finally top it with the small graham cracker square. Chop the leftover Hershey bars and set aside, do not chop finely, they should be in chunks.
  5. Place parchment paper on two large baking sheets. Preheat oven to 375.
  6. Once your cookie dough is done chilling, use a cookie scoop or large spoon, take a scoop of dough. Using your thumb, make an indent and flatten a little. Place the tiny smores in the middle. Take another scoop of cookie dough, flatten a little, and place on top of the smores. Mold the dough around the smores, it should make a large ball. Place on top of the parchment paper. Place 6 balls of smores cookies on each cookie sheet, make sure they are spread apart. (You should have 12 large cookies)
  7. Place in the oven for 10-12 minutes. Once the cookies are golden brown, remove from the oven. Let chill on the cookie sheet for 5-10 minutes. Using the chopped Hershey bar, lightly push on the tops of the cookies. Place on a baking rack until completely cool. Simply enjoy!
