Everyone deserves a little chocolate for Valentine’s Day! Rather than buying an expensive box of chocolates this year, I recommend making a delicious chocolate lovers red velvet brookie! Make that special someone, friend, neighbor, or family member a Valentine’s treat they won’t forget! Ok, so this treat is exceptional for Valentine’s Day, but it’s perfect for anytime you need that chocolate fix. I packed this brookie with chocolate! Red velvet, white chocolate, chocolate chips, fudgy brownies, and to top it off… M&M’s!? Rich and delicious! As always, enjoy and we would love to hear how your brookie turned out!

Instructions

  1. Preheat oven to 350 degrees. Line a 9×9 pan with parchment paper or spray the pan with oil.
  2. In a large mixing bowl or stand mixer, mix together the Red Velvet Cookie ingredients. Take the cake mix, oil, and eggs. With a hand mixer or stand mixer, mix together until blended well. Fold in chocolate chips. Put to the side.
  3. Next, make the brownies. In a large bowl, combine the flour, cocoa, baking powder, and salt. Whisk. Set aside.
  4. In a stand mixer or large mixing bowl, combine the brown sugar, sugar, and melted butter. Whisk (you can do this by hand, or use your hand mixer/stand mixer.)
  5. Add the eggs and oil to the sugar mixture. Whisk for about 30 seconds.
  6. Add the dry ingredients to the liquid mixture. Whisk together, but do not over mix. Recommend mixing on low settings for 30 seconds, or until batter is smooth.
  7. Fold in the chocolate chips with a rubber spatula.
  8. Pour the brownie mixture into the 9X9 pan. (on top of the parchment paper if you are using it.)
  9. Next you will add your red velvet cookie mix on top of the brownie mix. Take a spoon or cookie scoop, and drop spoonfuls into the brownie mix. Do not mix the cookies and brownies together. (You may have extra cookie batter leftover. If you do, I recommend taking the remaining dough and making cookies. Take spoonfuls of the cookie dough batter, place onto a baking sheet with parchment paper. Bake at 350 for 7-9 minutes.)
  10. Top with your M&M’s (optional but highly recommend adding)
  11. Bake for 30-40 minutes. Reminder – brownies will continue to cook a little bit while cooling. Check the brownies at 30 minutes, to see if they are done. (Take a toothpick and check to see if the middle of the brownie is done.) Let them cool completely.
