Let’s try a fresh take on homemade pizza that’s better than some takeout! Pack in tons of flavor with bacon, fresh spinach, goat cheese, fresh mozzarella and a cheesy garlic parmesan sauce! That’s right, it has BACON! This pizza tastes like it came from a pricey pizzeria, yet is easy to make and so tasty. With Valentine’s Day around the corner, I recommend it for that certain special someone. For an extra touch, shape it into a heart and bake! Ok, it’s also simple enough to make any night of the week, so it’s also perfect for everyday family meals. Kids even enjoy making pizza from scratch! In a large mixing bowl, mix together the self-rising flour, Greek yogurt, and basil. Mix together with a spatula. The mixture will be sticky, so use flour on your hands, and form into a ball in the bowl.

Transfer to a floured surface. Take the dough and kneed 4-5 times. Work the flour from your surface into the dough, to make it not so sticky. Add a little flour at a time to make it not so sticky.

Preheat oven to 475 degrees.

Take a piece of parchment paper, spray with olive oil (or any spray oil will be fine).

Mold your pizza onto the parchment paper. Use your fingers to push the dough around and try to get thinned out as possible. Use flour on your fingers if the dough is sticky. (I created my dough in a heart shape, for Valentine’s Day, but whatever shape you prefer your pizza is fine.)

Take a fork and poke holes all over the pizza. This will help the pizza dough to cook better.

Put in the oven for 5-6 minutes on the bottom rack.

While the pizza dough is cooking, you will make your sauce on the stove.

Take a medium size sauce pan, on medium low heat, put your butter in the pan to melt. Once melted, add the all-purpose flour and whisk until it has thickened. You are creating a roux to help thicken your sauce.

Add your half and half, garlic, and garlic salt. Continue to whisk and bring to a slight bubble.

Reduce to low heat and add the parmesan cheese. Continue to whisk until it is smooth. If the cheese is not melting turn it up to medium low heat. Put the sauce to the side once finished making.

After you take the pizza out of the oven, prepare to put your toppings on.

Spread the sauce evenly over the pizza.

Next cover the pizza evenly with your fresh mozzarella slices and goat cheese. The goat cheese will be little drops that will go in between each slice of mozzarella. You will use 2-4 ounces of the goat cheese, based on your preference.

Over the cheese, sprinkle your bacon, spinach, and shredded mozzarella (optional to make it extra cheesy).

Cook on 475 for 8-10 minutes on the top rack, until your cheese is melted and your pizza crust is a light brown.

Sprinkle your leftover parmesan cheese on top while still hot (optional) and simply enjoy!
