Sheet pan dinners are the new go to week night meals. Why? Because they are quick, healthier, and super easy to make! So, I created Sheet Pan Steak Fajitas, using fresh simple ingredients and spices. This is a simple yet fun sheet pan meal to make for a quick week night meal or a fun weekend meal. Don’t have all the spices listed below but have taco seasoning? Use your favorite taco seasoning (1 tablespoon)! I created my own spice mixture because pre-packaged taco seasoning sometimes gives me heartburn. So I always try to throw my own spices together, if I have them on hand! If not, taco seasoning packet is easy, and my go to in a pinch if I don't have all the spices on hand. Simple Sheet Pan Steak Fajitas

Simple Sheet Pan Steak Fajitas
  • 2 4-5 ounce Steaks (Cut in thin strips - Flank or Sirloin preferred)
  • 1 Medium Sized White Onion (Yellow if you do not have White Onion on hand.)
  • 2 Peppers- Cut into Thin Strips (I only had Red and Orange on hand, throw green in you have it on hand!)
  • 2 tbsp Olive Oil
  • 1 dash Chili Powder
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/4 tsp Ground Cumin
  • 1/4 tsp Smoked Paprika
  • 1 pinch Black Pepper
  • 1 pinch Dried Oregano
  • 2 Limes (Cut into 4's)
  • 1 tbsp Fresh Cilantro – Optional Topping
  • 6 Fajita Tortilla’s and Foil
  • Optional Fajita Toppings - Shredded Cheese, Avocado, Sour Cream, Salsa, Shredded Lettuce, etc.
Instructions
  1. Preheat oven to 400 degrees.
  2. Slice the peppers and onion into thin strips, set to the side
  3. Cut steak into strips, set aside in a small bowl.
  4. Drizzle ½ tbsp olive oil, ¼ tsp Garlic Powder and a dash of the ½ tsp salt over the peppers and onions. Mix together.
  5. Drizzle 1 ½ tbsp. olive oil, remaining salt, onion powder, ¼ tsp garlic powder, black pepper, oregano, cumin, onion powder, cumin, chili powder and paprika over the steak. Mix well.
  6. Spray non-stick spray on a large baking sheet. Place tortillas in foil and cover. Place on one side of the sheet.
  7. Pour the steak, peppers, and onions on the sheet. Use your hands or a large spoon, lightly mix together. Evenly spread the fajitas on the pan. Squeeze a lime wedge, over the meat and vegetables. Save the rest of the lime wedges to serve with fajitas, if preferred.
  8. Place in the oven at 400 degrees for 10-12 minutes. Assemble fajitas, should make 6-7. Simply enjoy!
