Savory Turkey Hand Pies

Have leftover turkey from the holidays? Burnt out on turkey sandwiches? Try using your leftover turkey or turkey you bought from the store, to make these turkey and Havarti cheese flaky hand pies! Warm flaky puff pastry surrounding turkey, melted cheese, sage and other seasonings. Making a delightful meal, that is super easy and quick to make!

Think of hot pockets, but better! My family loves these, especially when we have so much turkey leftover from Thanksgiving or other holiday meals. These hand pies are great for meal prepping or on the go meals! Feel free to even freeze them and pop them in the toaster oven or microwave.     Savory Turkey Hand Pies
  • 2 Puff Pastry Sheets
  • 8 oz Havarti Cheese (Block cheese preferred but pre-sliced will work also)
  • 10 Slices of Turkey
  • 1 Egg
  • 10 Sage Leaves (If the leaves are small, use 2 per pie. No fresh Sage? Use 2 dashes of dried/ground sage per pie)
  • Garlic Powder
  • Black Pepper
  • Garlic Salt
  • Parsley
Savory Turkey Hand Pies
  1. Preheat oven to 425. Place parchment paper on two large baking sheets, set aside.
  2. Cut the puff pastry into 5 even strips vertically. Next cut horizontal once in the middle. This should give you 10 squares (5 pies per sheet, 10 total.).
  3. Next place a thin slice of cheese on top of a puff pastry square. Fold one piece of turkey on top of the cheese. Lightly sprinkle with garlic powder and black pepper, be careful to not over do it. Place another thin slice of cheese on top of the turkey. Finely tear up a large sage leaf and sprinkle on top of the cheese.
  4. Place another puff pastry square on top of the cheese and turkey. Lightly pull it over to each side to line up with the other puff pastry square on the bottom. Press and seal all of the edges together with a fork.
  5. Place the hand pies on the baking sheet, spread apart. Take the egg and whisk. Using a basting brush, lightly brush the tops/sides with the egg wash.
  6. Cut an “x” on the top of each pie. Lightly sprinkle garlic salt and parsley on top of each pie.
  7. Place in the oven for 15-20 minutes, should be golden brown. Remove and let cool for a few minutes. Simply enjoy!
