If you have seen some of my other recipes, you know I LOVE puff pastry! So, I created a breakfast tart using a puff pastry. These tarts have sausage, egg, variety of cheeses, cream cheese, and basil (because basil is awesome) on top of a puff pastry. These tarts are light and crunchy, packed with protein, and very flavorful. Not only are these tarts easy to make, it is perfect for the on the go breakfasts. Great to have on hand for those busy mornings! They are perfect for meal prepping, events or just a weekend brunch! Savory Breakfast Tarts

Savory Breakfast Tarts
  • 1 Puff Pastry Sheet (Defrosted)
  • 4 Eggs
  • 1/3 cup Sausage Crumbles (I used Turkey Sausage but whatever you prefer is fine.)
  • 3 tbsp Cream Cheese
  • 1/3 cup Shredded Gruyere Cheese
  • 1/2 cup Shredded White Cheddar
  • 1/4 tsp Garlic Powder
  • 1 1/2 tbsp Fresh Basil (Chopped. If you only have dried basil, use 1 tbsp)
  • Salt
  • Black Pepper
  • Parsley (Optional Topping)
Instructions
  1. Preheat oven to 400.
  2. Lightly roll out the puff pastry sheet with a rolling pin. Cut into 6 even squares. Place parchment paper on top of a large baking sheet. Lay the puff pastry squares on top of the parchment paper.
  3. Lightly cut a thin border on each puff pastry square, making a window. Roughly 2 cm from the edge. Do not fully cut the pastry, you want to make an impression with the knife.
  4. Whisk the eggs in a small bowl. Using a basting brush, lightly brush the puff pastries with egg wash. Place in the oven for 15 minutes.
  5. While the puff pastries are baking, if needed, shredded your cheeses. Set aside. Add salt and pepper to the egg mixture, taste to your preference, set aside. Mix the cream cheese, basil and garlic powder in a small bowl, set aside.
  6. Once you remove the pastries from the oven, let cool for 2-3 minutes. Next, using a fork, press down the center of each pastry. Do not press down on the edges, leave it looking like a frame.
  7. Spread a little of the cream cheese mixture where you pressed down on the puff pastry, not on the frame. Spread evenly on each pastry. Next pour a little egg mixture into each window of the puff pastry. Pour a little at a time and distribute evenly over each pastry. A little may spill out of the pastry, which is okay.
  8. Top with sausage crumbles, gruyere and white cheese. Distribute evenly on each pastry. Carefully place on top rack in the oven for 15 minutes. Remove from oven once cooked and let cool for 5 minutes. Top with parsley, optional. Simply enjoy!
