Simply delicious garlic parmesan sweet potatoes

Ingredients
  • 1 Sweet potato - large
  • 2 tbsp Olive oil
  • 1 tsp Garlic - minced
  • 0.5 tsp Garlic powder
  • 0.5 tsp Kosher salt (Course sea salt or table salt can be used in place of kosher salt.)
  • 0.25 tsp Black pepper
  • 0.25 cup Parmesan cheese (Freshly grated parmesan is highly preferred, but other forms can work.)
  • 0.25 tsp Garlic salt ((Optional topping) Add up to an additional 1/4 tsp. if desired.)
  • 0.25 tsp Parsley ((Optional topping))
Instructions
  1. Preheat the oven to 425 degrees
  2. Prepare the sweet potato by cleaning the outside and cutting it into ½ inch thick slices. When complete, place the slices in a large mixing bowl.
  3. Add olive oil, minced garlic, garlic powder, salt and pepper in with the sweet potato slices. Mix well.
  4. Cover a large baking sheet with parchment paper. In a single layer, evenly space the sweet potato slices on the baking sheet.
  5. Bake for 30 minutes.
  6. Remove from the oven and turn the oven to broil.
  7. Sprinkle the parmesan cheese over each sweet potato slice.
  8. (Optional) Top each piece with a little parsley and garlic salt.
  9. Return the baking sheet to the oven to broil for 2-3 minutes.
  10. Remove from the oven and let cool about 5min or until safe.
  11. Simply enjoy!
