Instructions

  1. Mix the yeast and warm water together. While this is setting, in a large bowl, whisk together the flour and salt. Slowly pour in the warm water and stir with a wooden spoon until fully mixed.
  2. Add the honey, stir well. Let it sit for 2 hours with a towel covering the bowl.
  3. Once the 2 hours have passed, place the covered Dutch oven in the oven and preheat to 450 degrees. (No Dutch oven? Use a cast iron pan and cover with foil)
  4. Place the dough onto a floured surface. Fold the dough a few times and shape into a round ball.
  5. Take the twine and lightly soak in olive oil. Take the twine and place it on the bottom of the dough, in the middle, and wrap the ball of dough 4 times. It should make 8 sections. Tie up top, and cut off access string. Do not tie too tight.
  6. Place the dough on a very lightly floured piece of parchment paper. Let the dough sit for 10-15 minutes. Lightly spray the top/sides of the dough with water.
  7. Place the parchment paper with the dough on it, in the Dutch oven, cover. Bake for 30 minutes. Uncover, bake for 5-8 more minutes. Remove from oven and let cool for 1 minute. Remove twine, you will have to cut/pull it off. (This will help the bread pull apart easily and be individual servings of 10 “rolls”)
  8. Push the cinnamon stick through the top, and it will look like a pumpkin! Best served warm! Do not place in a plastic container or bag, for several hours, or the bread will no longer be crispy.
