Instead of using artificial coloring to get that St. Patrick’s Day green, I used a light blend of all-natural spinach. The best part… no need to tell anyone it’s healthy or natural coloring because you can’t taste the spinach! To enhance the overall flavor, I added cinnamon and vanilla.

Naturally-Dyed Green Pancakes

Naturally-Dyed Green Pancakes
  • 1.5 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Vanilla Extract
  • 2 Eggs
  • 1 tsp Ground Cinnamon
  • 0.5 tsp Salt
  • 2 tbsp Granulated Sugar
  • 0.75 cup Milk (Regular, Almond, or Soy works.)
  • 2 cup Spinach (Loosly cups of spinach, do not pack the spinach in a measuring cup.)
  • Lucky Charms (Optional Topping)
Instructions
  1. In mixing bowl, mix together the flour, baking powder, baking soda, sugar, cinnamon, and salt. Whisk. Set aside.
  2. Using a blender – blend the spinach, milk, eggs, and vanilla. Blend until smooth.
  3. Mix the liquid green mixture to the flour mixture. Whisk. Should be a little thick, and not super watery. If it is too thick, add 1-2 tbsp more of milk.
  4. Heat a large non-stick griddle over medium high heat, spray with oil or melt butter/some sort of oil to grease.
  5. Pour ¼ cup of batter for each pancake onto the pan. Flip when you start to see it bubble, should be a little brown on each side.
  6. Serve with your favorite toppings - Peanut Butter, Maple Syrup, Honey, etc. For something fun on St. Patrick’s Day, top with Lucky Charms as pictured. Simply Enjoy!
