In mixing bowl, mix together the flour, baking powder, baking soda, sugar, cinnamon, and salt. Whisk. Set aside.

Using a blender – blend the spinach, milk, eggs, and vanilla. Blend until smooth.

Mix the liquid green mixture to the flour mixture. Whisk. Should be a little thick, and not super watery. If it is too thick, add 1-2 tbsp more of milk.

Heat a large non-stick griddle over medium high heat, spray with oil or melt butter/some sort of oil to grease.

Pour ¼ cup of batter for each pancake onto the pan. Flip when you start to see it bubble, should be a little brown on each side.

Serve with your favorite toppings - Peanut Butter, Maple Syrup, Honey, etc. For something fun on St. Patrick’s Day, top with Lucky Charms as pictured. Simply Enjoy!
