Blender muffins are the easiest muffins you will ever make! These pumpkin spice muffins have no raw sugar and no flour! Packed with all natural ingredients, fiber, and nutrition. Plus, I added chocolate chips to half of the muffins, because chocolate and pumpkin spice are a great combo, and they all taste delicious!! I have been making my daughter these muffins since turned one years old. But they aren’t just for kids, adults love them too! Mini Pumpkin Spice Blender Muffins

Mini Pumpkin Spice Blender Muffins

  • 1 cup Oats
  • 1 Egg
  • 1/4 cup Pumpkin Puree
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/4 cup Maple Syrup
  • 1 Ripe Banana
  • 2 tsp Pumpkin Spice
  • 1 tsp Cinnamon
  • 1/2 tsp Ground Flaxseed (Optional)
  • 1/4 cup Mini Chocolate Chips
Instructions
  1. Preheat oven to 350. Spray mini muffin pan with non-stick spray.
  2. Place all ingredients in a blender, except for the chocolate chips, and blend. You may have to stir 1-2 times and blend again. The mixture will be a little clumpy, that is okay.
  3. Fill each muffin section on the pan by filling 3/4th’s full, until the mixture is gone. Sprinkle each muffin with chocolate chips, if you prefer.
  4. Place in the oven for 8-10 minutes. Check at 8 minutes, using a toothpick. Should be dry.
  5. Cool for 5-10 minutes. Serve and enjoy! (Store muffins in sealed container for 2-3 days or freeze up to a couple of months)
