Heat the olive oil in a large skillet on the stove, medium to high heat.

Season your pork chops with salt, pepper, and garlic powder. (Season to taste with salt and black pepper).

Place your pork chops in the hot skillet. Cook each side for 5-6 minutes.

Once finished, you should have a nice sear on each side. Remove pork chops from the skillet, transfer to plate and place foil over the pork chops; set aside.

Return to your skillet and melt the butter over medium low heat.

Once melted, add the minced garlic. Cook for 30-60 seconds.

Add the chipotle, honey, vinegar, and smoked paprika to the skillet. Stir. Cook for 3-4 minutes, sauce should thicken a little.

Add the pork chops back to the skillet and into the sauce. Cook the pork chops 2 minutes on each side, baste generously with the sauce while cooking.

Top with parsley (optional) and simply enjoy!
