Like most people, every Easter we have ham during our family get-togethers and there are always a ton of leftovers. To say the least, we get burnt out on ham and ham sandwiches quickly afterwards. So this year, I decided to do something different with the leftovers. I took some of my favorite ingredients – puff pastry, brie cheese, a dash of lightly seasoned/spicy honey mixture and TA-DA! Ham and Brie Cheese Hand Held Pies. Kind of like a hot pocket, but better, because it has brie cheese in it.
These were an enormous hit for the family. The best part, you can freeze them and reheat them whenever! These pies are perfect for a meal or even serve as an appetizer. Great for meal prepping! As always, we love to hear your thoughts.

Instructions

Place parchment paper on a large baking sheet. Preheat oven to 400 degrees.

Take your defrosted puff pastry sheets, and lightly roll them both out. Cut each sheet into 6 squares. (If you are making appetizers, cut each sheet into 12 squares.)

Mix the butter and honey in a microwave safe dish. Microwave for 30-60 seconds, until butter is melted. Stir. Add cayenne pepper, garlic powder, garlic salt, and thyme. Stir.

Lightly baste each puff pastry square with the honey mixture, avoid the edges.

Place a thin slice of brie cheese on top of the honey mixture on one square.

Next place a slice of ham on top of the brie cheese, you may have to cut the slice of ham in half or fold the slice of ham in half. If making appetizers, you will use ½ slice of ham.

Place two thin slices of brie cheese on top of the ham. Add more brie cheese to the top if you have enough leftover.

Take another square, and place it over the brie and ham, with the honey mixture facing down on top of the brie cheese. Lightly press down and lightly press the squares so the edges line up. Press and seal the edges together with a fork.

Once you have assembled each pie, lightly stripe an “X” on top with a knife. Next lightly baste the tops of the puff pastry with egg wash. Sprinkle with Parsley (optional).

Bake at 400 for 20-25 minutes. Should be golden brown. Some cheese may come out, that is okay. Cool for a few minutes before serving. Simply enjoy!
