Calling all cheese lovers out there… this recipe is for you! Four fresh and wholesome cheeses baked with delicious Priano tortellini in a creamy sauce… Simply extraordinary! Brie, Parmesan, and Havarti all melted into a creamy sauce, poured over Priano cheese tortellini, then baked with a mozzarella topping. All the refined feels of an elegant restaurant pasta with this cozy at home pasta recipe!

This week I created this homemade recipe for my family and they devoured it! IF you have any left… lucky you, this dish stores well for meals throughout the week. It might even be slightly better the next day, making it perfect for meal prepping. My husband is adamant that this pasta belongs on a fancy “ristorante” menu, while kids simply say “YUMMY”! Perfectly paired with lightly grilled fish or chicken, or even as a standalone entrée, this recipe won’t disappoint. Make this a protein packed main dish by adding grilled chicken, prosciutto, or easiest of all, Priano herb chicken tortellini! No sponsorship here... we just really like this tortellini. Four Cheese Baked Tortellini

Four Cheese Baked Tortellini
  • 9 oz Tortellini (Whatever brand/flavor you prefer. I used fresh not frozen Cheese Tortellini)
  • 4 oz Brie Cheese (Recommend lightly remove the rind beforehand)
  • 4 oz Havarti cheese
  • 0.25 cup Shredded Mozzarella Cheese
  • 0.25 cup Freshly Shredded Parmesan Cheese (pre-shredded will work fine)
  • 0.25 cup Bread Crumbs (Plain Panko Bread Crumbs will be fine if you do not have regular breadcrumbs.)
  • 0.25 tsp Kosher Salt
  • 0.25 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 cup Half & Half (Heavy Cream or Whole Milk is an option if you do not have heavy cream.)
  • 1 tbsp Butter (non-salted)
  • 0.5 tbsp All Purpose Flour
  • Parsley (Optional Topping)
Instructions
  1. Cook the tortellini according to directions. Drain. Set to the side.
  2. In a medium sauce pan on medium high heat, melt your butter. Once melted, whisk in your flour to create a roux. This will help your sauce thicken a little.
  3. Pour the half & half into the pan and continue to whisk until smooth. Bring to a slight boil.
  4. Add the salt, pepper, and garlic powder. Whisk.
  5. Stir in the Brie and Havarti cheese to the sauce pan. (I recommend cubing the cheese before adding it.) Whisk every 30-60 seconds, until it is smooth and the cheese is melted.
  6. Whisk in the parmesan cheese. Continue to whisk until smooth. Reduce to low heat and let it simmer for 1-2 minutes.
  7. Preheat oven to Broil (550 degrees)
  8. Add the tortellini to your sauce and stir.
  9. Take a 9 inch baking dish (or any small oven safe dish) and spray with oil. Pour the tortellini mixture into the pan.
  10. Sprinkle the mozzarella cheese over the tortellini. Over the cheese, sprinkle the bread crumbs and parsley (optional). Place in the oven on broil for 3-5 minutes, be careful not to let it burn.
  11. Remove from the oven once the cheese is a light golden brown.
  12. Cool for a couple of minutes. Serve as a meal or a side. Simply Enjoy!
