I LOVE pesto! So, I explored a few pesto recipes and now, this one has become the family favorite. If you love pesto and pasta, this dish is perfect for you! This pasta dish screams warm and cozy. Creamy, cheesy, and a touch of pesto in every bite. Nothing is better! It's a perfect dish to mark special occasions, yet quick and easy enough to make it an excellent weeknight meal! Simply Creamy Pesto Shrimp Pasta

Simply Creamy Pesto Shrimp Pasta
  • 8 oz Favorite Pasta (I recommend Banza linguine. It is so good and it adds extra fiber/veggies to your meal!)
  • 1 cup Heavy Cream (Half & Half works well too.)
  • 0.25 cup Pesto
  • 0.75 tsp Sea Salt
  • 1 lb Shrimp (fresh deveined/detailed is preferred, but frozen deveined/detailed works also)
  • 1 tbsp Butter
  • 0.25 tbsp All Purpose Flour
  • 0.125 tsp Black Pepper
  • 0.25 tsp Garlic Salt
  • 0.25 tbsp Garlic Powder
  • 2 tbsp Olive Oil
  • 0.25 cup Parmeasan Cheese (Freshly Grated is preferred but regular parmesan cheese works fine too.)
Instructions
  1. Prepare your shrimp to be cooked. Defrost if need be. Remove the shell and tails before cooking.
  2. Cook your noodles according to the package.
  3. While your pasta is cooking, heat 1 tbsp olive oil in a large skillet on medium high heat.
  4. Toss shrimp with 1 tbsp olive oil, black pepper, garlic salt, and garlic powder. Place the seasoned shrimp into the hot skillet.
  5. Cook each side of the shrimp for 5-6 minutes (if the shrimp is frozen precooked, cook 2-3 minutes on each side). Remove the shrimp and put to the side once fully cooked.
  6. Using the same skillet, melt the butter, on medium high heat.
  7. Once melted, add your flour and whisk until you create a roux (this will help you thicken your sauce).
  8. Add the heavy cream and salt to the roux. Leave on medium high heat and bring to a light bubble.
  9. Add your pesto to the skillet.
  10. Continue to whisk and cook on medium high heat for 5 minutes. You want your sauce to be a little thick.
  11. Once your sauce has thickened, add the shrimp back into the pan to reheat. Cook for another 1-2 minutes.
  12. Pour the sauce over your cooked noodles and stir until completely covered.
  13. Top with parmesan cheese. Simply enjoy!
