Looking for a quick and easy week night meal? I’ve got you covered! Creamy herb cheese mixture layered on top of chicken, then topped with mozzarella, surrounded by potatoes and broccoli. So easy to make and very flavorful. While it is baking, the cheese mixture melts a little into the potatoes and broccoli, making it such a warm/comforting, yet healthy meal. It’s healthy, delicious, and a new family favorite at my house! Plus, it all cooks in one pan and is ready in less than an hour. So easy! As always, I love to hear your thoughts!
Creamy Herb Chicken and Veggies
- 4 Thin Sliced Chicken Breasts
- 1 Block of Cream Cheese (I used light cream cheese, but whatever you prefer!)
- 1 1/2 cup Shredded Mozzarella Cheese
- 1/4 cup Shredded Parmesan Cheese
- 2 1/2 tbsp Fresh Basil (chopped) (Or 1 tbsp Dried Basil)
- 1/2 tsp Dried Rosemary (1 tsp if fresh, I only had dried on hand.)
- Salt
- Black Pepper
- 2 1/2 tsp Garlic Powder
- 1/4 cup Panko Bread Crumbs
- Parsley
- Olive Oil
- 1 Head of Broccoli
- 8-10 Small Medley Potatoes
