Looking for a quick and easy week night meal? I’ve got you covered! Creamy herb cheese mixture layered on top of chicken, then topped with mozzarella, surrounded by potatoes and broccoli. So easy to make and very flavorful. While it is baking, the cheese mixture melts a little into the potatoes and broccoli, making it such a warm/comforting, yet healthy meal. It’s healthy, delicious, and a new family favorite at my house! Plus, it all cooks in one pan and is ready in less than an hour. So easy! As always, I love to hear your thoughts!

Instructions

  1. Wash and sliced your potatoes into 4th’s. Place in a large mixing bowl. Wash and prepare your broccoli. Recommend cutting into small florets. Add to the potatoes. Drizzle olive oil, 1/2 tsp garlic powder, salt and pepper (to taste). Stir well. Set aside.
  2. Preheat oven to 375. Take a 9 x 13, baking pan, spray with non-stick oil. Set aside.
  3. Take the chicken breasts, lightly salt and pepper each side of every chicken breast. Next evenly sprinkle 1 tsp garlic powder over all 4 chicken breasts.
  4. In a microwave safe bowl, place the block of cream cheese in the bowl and microwave for 30-40 seconds. Stir in 1 tsp garlic powder, basil, rosemary, half of the parmesan cheese, and a dash of salt. Add ½ cup shredded mozzarella. Stir well.
  5. Place the seasoned chicken breasts in the pan, make sure they centered and closely touching, you want to leave room on the edges for the veggies. Take the creamy cheese mixture and spread evenly over the chicken.
  6. Next take the veggies and evenly distribute around the chicken, do not place on top of the chicken. Sprinkle remaining mozzarella and bread crumbs over the chicken. Top with parsley.
  7. Bake at 375 for 30-40 minutes, or until it reaches 165 degrees. Check at 30 minutes to start. Let cool for a couple of minutes, serve, and simply enjoy!
