These protein balls are great for those busy mornings, snacks, or just when you are needing something a little sweet. They have protein, energy, and fiber. I of course do not recommend sharing these with kids, unless you want them bouncing off of the walls from the espresso! These easy to make protein balls are packed with oats, almonds, espresso, chocolate, and flaxseeds. As always, I love to hear your thoughts!

Chocolate Almond Espresso Protein Balls

Chocolate Almond Espresso Protein Balls
  • 1 cup Old Fashioned Oats (Or Rolled Oats)
  • 1 1/2 tsp Cocoa Powder
  • 1/3 cup Almond Butter
  • 3 tbsp Honey
  • 2 pinch Sea Salt
  • 1 1/2 tsp Espresso Powder (I used Instant Espresso Powder)
  • 1/4 cup Mini Chocolate Chips
  • 1 tsp Flaxseed (Optional but recommended.)
  • 2 1/2 tbsp Chopped Almonds
Instructions
  1. In a large bowl, mix the oats, salt, flaxseed, almonds, espresso powder, chocolate chips, and cocoa powder. Stir well.
  2. Add the honey and almond butter. Using a spoon or spatula, stir well.
  3. Place in the refrigerator for at least 1 hour.
  4. Using a cookie scoop or large spoon, form balls. Should make 12. Place is a sealed tight container and store in the refrigerator for up to 1 week.
