Chicken and Cheese Ravioli with a Creamy Parmesan Sauce

Chicken and Cheese Ravioli with a Creamy Parmesan Sauce
  • 10 oz Cheese Ravioli (Non-frozen preferred but whatever you have will work. I used Rana brand.)
  • 1 lb Thin Chicken Breasts (4-5 Chicken breasts Or boneless chicken thighs)
  • 1 1/2 tsp Minced Garlic
  • 3/4 cup Heavy Cream
  • 1/2 cup Chicken Broth (Low Sodium Preferred)
  • 1 cup Shredded Parmesan (Fresh is better but pre grated works too! Extra for topping.)
  • 2 tbsp Butter (non-salted)
  • 2 cup Spinach
  • 1 tsp Smoked Paprika (Egg Wash)
  • 1 tsp Garlic Powder
  • Salt (Optional Topping)
  • Black Pepper
  • 2 tsp Thyme
  • 3 tsp Basil (I used fresh but dried works too. If using fresh, lightly chop beforehand. If using dried, use 1 1/2 tsp.)
  • 1/4 tsp Salt (For the sauce)
Instructions
  1. Season chicken with 1 tsp thyme, garlic powder, salt and pepper (to taste).
  2. Cook ravioli according to directions. Lightly drizzle olive oil once cooked, set aside.
  3. While your ravioli is cooking, spray a large skillet with non-stick cooking spray. Melt 1 tbsp of butter in a large skillet on medium high heat. Add chicken and sear both sides, about 4-5 minutes on each side. Remove from skillet once fully cooked to a plate and cover with foil. Set aside.
  4. Using the same large skillet, melt remaining butter on medium high heat. Add garlic, paprika, thyme, basil, and ¼ tsp salt. Stir. Add heavy cream and chicken broth, whisk until smooth. Bring to a light boil.
  5. Whisk in the parmesan cheese, whisk until smooth.
  6. Stir in spinach, let simmer for 1-2 minutes.
  7. Return the chicken back to the skillet, reduce to medium low heat and let simmer for 5 minutes on one side, flip the chicken.
  8. Add ravioli to the skillet, lightly stir so the sauce covers the ravioli. Let simmer another 4-5 minutes.
  9. Plate, top with parmesan cheese, and serve. Simply enjoy!
