Mini avocado toasts are not only delicious, they are fun to eat and everyone will enjoy them! These mini toasts are great to serve during those brunch/lunch events, or simply make for your family/friends for breakfast, lunch, or just a fun snack! Warm crunchy bread, topped with a creamy avocado spread and whatever toppings you prefer! Best part, since they are tiny, you can do a variety of toppings. Which is nice especially for events, that way people have options. I topped some with only flaky sea salt, others with hard boiled eggs, and a few with everything bagel seasoning. They were a hit! Instructions

  1. Preheat oven to 375. Place parchment paper on a large baking sheet, set aside.
  2. Slice the French baguette, about 1 ½ in thick. You should have about 20 slices.
  3. Place the slices of bread on top of the baking sheet. Using a basting brush, lightly brush the tops with olive oil, do not soak the bread.
  4. Place in the oven for 5 minutes. While the bread is toasting, cut/remove the pit and outer shell of the avocados. Place the avocados, sea salt, and olive oil in a food processor or nutri bullet, pulse for a few seconds. You may have large chunks, depending on your preference, that is okay. If you do not care for chunks, mash with a fork. Set aside.
  5. If you are topping with hard boiled eggs, slice the eggs and set aside.
  6. Scoop small portions of the avocado mixture (about 1-2 tsp) onto the toasted slices of bread while it is still warm. Top with extra sea salt, everything bagel seasoning, or sliced hard boiled eggs. (I recommend doing a variety of toppings) Best served when a little warm. Simply enjoy!
