Chocolate fudgy cookies that are lightly crunchy on the outside with a soft center, and to top it off they have M&M’s. So GOOD! Serve at any event or just make when you need a chocolate fix! These cookies bring on all the good feelings while eating.

Someone recently asked me, “How many times do you make a recipe before posting?” Typically, I make it at least 2 times, just to make sure the recipe flows and the ingredients are correct. The first time I developed this recipe, I completely forgot to use eggs! Classic rookie mistake. I couldn’t believe I had made the mistake, but hey it happens!  Luckily, I had enough ingredients to make another batch. Don’t forget your eggs everyone! As always, I love to hear your thoughts!

Instructions

  1. Preheat oven to 350. Place parchment paper on 2 large baking sheets, set aside.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, espresso powder, and baking soda.
  3. Place the butter and 3/4 ‘s of the chocolate chips in a microwave safe bowl. Microwave for 20 seconds at a time, until completely melted. Stir until smooth.
  4. Using a stand mixer bowl or large mixing bowl, whisk together the eggs, vanilla extract, and both sugars for about 30-60 minutes, until smooth. Pour in the chocolate mixture, stir for another 30-60 seconds.
  5. Add the flour mixture. Using the paddle attachment on your stand mixer (regular hand mixer will work well also), mix for about 1 minute. Add 1 ½ cups of the M&M’s. Stir.
  6. Using a cookie scoop or large spoon, place large balls of the dough on the cookie sheet. Do not press the dough down. You want the balls to be a little bigger for larger cookies. Place in oven for 9-11 minutes (for smaller cookies, baking for 8-9 minutes).
  7. Once you remove from the oven, lightly tap the baking sheet on the counter top 1-2 times to help them flatten a little. You want the cookies to be a little thick.
  8. While the cookies are still warm, use the rest of the M&M’s and chocolate chips to evenly top all of the cookies. Cool on baking sheet for 5 minutes and move to cooling rack. Repeat steps 6-7 until the cookie dough is gone. Simply Enjoy!
