Sausage, egg, and three fresh cheeses wrapped up in a crunchy egg roll?? What a unique and delicious breakfast! Perfect for on the go, meal prepping, events, or weekend brunch. Plus, a delicious sweet and spicy dipping sauce to pair with the egg rolls? SO GOOD. I recently made these for my family during our weekend brunch, they at them ALL. Even my toddler couldn’t stop eating them! As always, I love to hear your thoughts and I hope you enjoy!

Instructions
-
Brown the sausage and scramble the eggs. Set aside.
-
Preheat oven to 425. Place parchment paper on a large baking sheet. (You may need 2 baking sheets, depending the sizes).
-
Combine the shredded cheese, parmesan cheese, and white cheddar cheese in a bowl. Set aside.
-
Take an egg roll wrapper, lay flat on a surface in a diamond configuration (so that a corner is facing toward you). Sprinkle a little cheese mixture on top of the egg roll wrapper in the middle. Top with 1 tablespoon of sausage and 1 tablespoon of egg (or however much you can fit with still being able to wrap).
-
Take a dash of garlic salt over the sausage/eggs and sprinkle a pinch of basil. Sprinkle a little cheese mixture on top.
-
Fold up the egg roll by take the corner that is closest to you, fold upward. Take the left and right corner, fold inward. Lightly brush water on the edges to help keep the egg roll intact. Take the top corner and fold over the other corners to assemble the egg roll. Lay seem down on the parchment paper/baking sheet.
-
Once all of the egg rolls have been assembled on the baking sheet(s), take a basting brush, lightly brush the egg rolls with olive oil.
-
Bake at 425 for 12-15 minutes.
-
While the egg rolls are cooking, make your sauce. In a microwave safe bowl, add the honey and the chili garlic sauce. Heat for 15-20 seconds, stir. Add more chili garlic sauce if you want it spicier or more honey if you need to lighten it up. This sauce should be sweet and spicy.
-
Once the egg rolls are crispy and golden brown, remove from oven, and let cool for a 3-4 minutes before eating. Dunk in sauce. Simply enjoy!
