If you have seen my other posts, you know that I LOVE brunch. Which is why I am super excited for this recipe! Crispy bacon, creamy Brie cheese, eggs, variety of spices layered on top of flaky buttery croissants. That’s right, this breakfast bake has Brie in it! All of these delicious ingredients are baked together forming a delightful and unique breakfast casserole. Great for weekend brunch, meal prepping for quick/easy breakfast during the week or serve at holidays/events! I truly hope you enjoy this breakfast bake and remember I love to hear your thoughts!

Bacon and Brie Croissant Breakfast Bake

Instructions

  1. Preheat oven at 400. Lay parchment paper or foil on a large baking sheet. Place the strips of bacon on the baking sheet and cook for 15-18 minutes. Once done, remove onto a paper towel lined plate. Set aside.
  2. While the bacon is cooking, spray a 9 x 13 baking dish with non-stick spray, set aside.
  3. Take the croissants, cut each down the middle and slice into cubes. Layer on the bottom of the dish.
  4. Next lightly scrap the rind (outer white part) off of the brie cheese wheel as best you can. This optional but I recommend doing it. Then slice and cut into small ¼ inch squares. Take half of the brie cheese and lay on top of the croissants. Tear up the spinach and sprinkle on top of the brie.
  5. In a mixing bowl, whisk the eggs, milk, salt, pepper, garlic powder, and basil. Set aside
  6. Once the bacon is done, chop it (it should be crispy), sprinkle on top of the brie and croissants. Pour the egg mixture over everything in the baking dish evenly.
  7. Reduce oven to 350. Cover dish with foil and place in the oven for 25-30 minutes. Remove foil and place back in the oven for 5 minutes. Add the rest of the brie cheese and white cheddar on top and bake for another 5 minutes, uncovered.
  8. Let cool for 10 minutes. Serve and simply enjoy!
